Thursday To Go

I have a ton to do today, but I’m posting a recipe that we love and it is easy and fast. This is not my original recipe.

Bruschetta Chicken Bake

1 can (14.5 oz) diced tomatoes, undrained
1 pkg Stove Top Stuffing Mix for Chicken
½ cup water
2 cloves of garlic, minced
1 ½ lbs boneless skinless chicken breast, cut into bite-sized pieces
1 tsp dried basil leaves
1 c Kraft shredded mozzarella cheese

Preheat oven to 400 degrees. Place tomatoes in medium bowl. Add stuffing mix, water, garlic; just stir until stuffing mix is moistened. Set aside.

Place chicken in a 13x9 baking dish; sprinkle with basil and cheese. Top with stuffing mixture.

Bake 30 min or until chicken is cooked through.

This looks fantastic. And I think I might just have all the ingredients I need...that's the best part. Thanks!

Ok, me again. I made this on Friday evening and it was awesome. I added spinach to it just because I didn't eat anything green that day and it was just yummy. I was so excited. You're the first person bloggy friend whose recipe I have tried. My husband loved it too. I even brought leftovers to my friend's house. I will post the recipe tomorrow with pictures but link back to you, is that ok?
